  • Terroir

    Our olive trees live 4,600 ft up in the hills of Trás-os-Montes, Portugal. Cool nights make the olives grow slow. This keeps the bright green color and healthy plant power in our Portuguese olive oil.

  • Cultivar

    We blend four local olives, Cobrançosa, Madural, Verdeal, and Cordovil. Each adds a new taste. Together they make a rich, extra virgin olive oil that feels alive.

  • Hand-Picking

    We pick the olives at dawn, by hand, while they are still cool. This gentle touch keeps the fresh smell for our cold-pressed extra virgin olive oil.

  • Six-Hour Press

    The fruit rides to the stone mill in minutes. We press it within six hours, under 27 °C. Fast, gentle work locks in flavor and creates a single-origin cold-pressed Portuguese EVOO.
