Picked early and milled within hours, so the acidity stays low (0.11%, against a 0.8% legal limit) and the flavour stays bright. Clean, green-gold, with a peppery finish. Made for finishing, not high heat. This bundle ships as two bottles from the same lot.

One estate. One harvest window. The olives are picked early and milled on stainless within hours, then rested in oxygen-controlled tanks before bottling. Every release carries its harvest date and lot code, so you always know what you’re pouring.

Pour two ribbons over the plate and add a pinch of sea salt. It’s at its best over steak, white fish, roasted vegetables, caprese, or warm bread. Keep it off the heat. This is a finishing oil, for last-minute shine and bite.

Olive oil is perishable, so our returns are specific: if a bottle arrives damaged, email hello@olivyusa.com within 3 days with photos and we’ll replace or refund it. New, unopened bottles can be returned within 3 days of delivery. We don’t take returns for taste or change of mind.

Our olives grow on a single family estate in Trás-os-Montes, in Portugal's northeast. They're picked early, when the fruit is green and the oil is at its most peppery, and milled within hours. One grove, one harvest. Every bottle carries the lot code that ties it back to the trees it came from.
